The past two nights, I gave in to the desperate calls from the kitchen to "stop ignoring the fact that I exist" and cooked two pretty fabulous meals (and I have people to vouch for me I swear).
So do you want to know what I made? I thought you might, so I'm sharing the recipes below. And please link to a recipe that you love in the comments (or email me!). I am excited to try new recipes out on Clancy, my guinea pig. For some reason, even with all the mishaps, he still likes my cooking!
Garlic Cheddar Chicken
Ingredients:
1/2 c butter
4 cloves of minced garlic (I use the pre-minced garlic that you can buy in a jar, much easier!)
3/4 c dry bread crumbs
1/2 c grated Parmesan cheese
1 1/2 c shredded cheddar
1/4 tsp parsley
1/4 tsp oregano
salt and pepper for flavor
4 boneless skinless chicken breasts cut in half
-Preheat oven to 350 degrees
-Melt butter in saucepan and cook garlic until tender
-In a shallow bowl, combine everything but the chicken and butter/garlic mixture
-dip chicken breasts first into butter/garlic mixture, then dip into bread crumb mixture
-bake for 30 minutes
**The only thing I would change if I made this again would be more cheese! I think I would add a layer of shredded cheese a few minutes before it was ready to come out of the oven.
Shortcut Chicken Manicotti
1 can (10-3/4 oz.) condensed cream of chicken soup
1-1/2 cups water
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
2 cups frozen broccoli florets
12 manicotti pasta, uncooked
1 lb. boneless skinless chicken breasts, cut into 1/2-inch strips
1/4 cup KRAFT 100% Grated Parmesan Cheese
PREHEAT oven to 400ºF. Mix soup, water and VELVEETA in microwaveable bowl. Microwave on HIGH 3 min. or until VELVEETA is melted and mixture is well blended, stirring after 2 min. Pour one-third of the soup mixture onto bottom of 13x9-inch baking dish; set aside. Add broccoli to remaining soup mixture.
STUFF pasta with chicken strips; place in baking dish. Cover completely with remaining soup mixture. Sprinkle with Parmesan cheese. Cover with foil.
BAKE 45 to 50 min. or until pasta is tender and chicken is cooked through.
**Again, I would add more cheese to this recipe. And the broccoli turned out a little overcooked, so I might add that in halfway through next time.

I'm totally not a good cook but here is my favorite dish: mini penne pasta, a jar of pesto and cut up chicken. It's simple and easy so it's good for me! haha

Mmm. These sound delicious. All of my favorite recipes at the moment are from Weight Watchers--not exactly buttery, cheesy goodness. Sorry.

Taught my 11 year old how to make your tater tot casserole, he finished the entire dish in one night- that's because he's growing,not because it tastes good.
Because heaven forbid anything that's not fast food tastes good.
